Chef Edgar Ruiz brings years of skill, experience, and ambition to the kitchen of Rosa Mexican Kitchen.  



Edgar has an intense passion for cooking and loves the joy that it brings him, in Edgar’s words, “I could cook 24 hours a day, I just love it!” Edgars motto is.. ”Live every day, likes its Taco Tuesday!” But even more importantly, he loves the feeling that it brings him to see the enjoyment of those experiencing his culinary passion. Seeing them satisfied and coming back day after day to enjoy his love of cooking.

At Rosa Mexican Kitchen it is his goal to showcase his Mexican roots and his passion for living in Colorado, offering Mexican cuisine with a Rocky Mountain flair. Chef Edgar’s story is reminiscent of many great chefs, that of someone starting at the bottom and determinedly working his way up. Emigrating to the United States from central Mexico in the early 1990’s, Edgar began his culinary career as a dishwasher in his father’s restaurant in Anchorage, Alaska. His early exposure to and love for family cooking and traditions in Mexico primed his eagerness to learn more in Colorado at every opportunity.

The Ingredients

Since Rosa Mexican Kitchen is a scratch kitchen they can accommodate most dietary restrictions, including dairy-free and gluten-free needs. And, they have what everyone wants – Taco Tuesday! According to Ruiz, you should prepare to wait in line.
